Shopping the Bazaar Without Buying the Tourist Menu

Anyone can find a bazaar. The difference between a good afternoon and an expensive one is knowing what is genuinely made here, what is imported and marked up, and how the conversation is supposed to go. That is what this day is for — a guide who translates the pricing as well as the language.

• Spices, bought by weight rather than in gift tins: Urfa and Aleppo pepper, sumac, wild oregano, pul biber.
• Lokum, the real kind, cut from a slab in front of you — double-roasted pistachio is the benchmark.
• Copper, still hammered and re-tinned by hand; a coffee pot that has been used is often better made than a new one.
• Ceramics from Kütahya and Avanos, where hand-painted work has a visible brush line and a signed base.
• Textiles: the flat cotton peştemal towel packs to nothing, dries in an hour and outlives everything in your bathroom.

Saffron is the classic trap — vivid orange threads sold by the handful for very little are almost always safflower, which colours but does not taste. Real saffron is deep red, sold in grams, and never cheap. Similar logic applies to "Turkish" leather with no smell, "silk" scarves that crease like polyester, and rose oil sold in volumes no distillery could produce.

For gold, price is weight plus workmanship and the hallmark is stamped; ask to see it. For carpets, ask what the pile is, count knots on the reverse, and get the paperwork if you plan to take an old piece out of the country.

Tea appears first. That is not a sales trick, it is the opening of the conversation, and drinking it obliges you to nothing. Ask the price, name yours somewhere below it, and expect to meet in the middle. Two items bought together beat one item argued over for ten minutes. And if the number does not work, thanking the seller and walking on is completely normal — nobody takes offence.
