What an olive year looks like
Olives are a late crop. The fruit sets through the hot months, colours from green to violet to black through autumn, and comes off the trees in late autumn and winter, which is when the presses run day and night. Outside harvest the groves are quieter, but the mills still open their doors and the tasting is the same.
